Chicken Salad Croissant Sandwich

CHICKEN SALAD CROISSANT SANDWICH 


Chicken Salad 
  • 1 can chicken breast or rotisserie chicken
  • 2 tablespoons mayo 
  • 1/4 cup chopped celery
  • 1/4 cup dried cranberries 
  • 1/8 cup chopped green onions 
  • 1 teaspoon onion powder 
  • 1 teaspoon salt 
  • 1 teaspoon pepper
Sandwich 

  • 1 croissant  
  • 1 piece red leaf lettuce 
  • 1 teaspoon mustard  

Make Chicken Salad 

1. Open chicken, drain/rinse with water, put in a mixing bowl & break into small pieces. Add chopped celery, onions, & cranberries.



2. Add mayo, onion powder, salt, & pepper. Mix all ingredients together until they are well blended. 


4. Once chicken salad is ready use immediately or refrigerate until you are ready to make a sandwich or serve. 


PLATE FINISHED PRODUCT 

4. Cut croissant open & spread with mustard or extra mayo. Place red leaf lettuce on the bottom of the croissant & scoop approximately 1/4-1/2 cup of chicken salad on top of the lettuce. 



STORY BEHIND THE DISH
I have always hated tuna but liked the idea of a tuna salad sandwich. A few years ago I tried a sample of the canned white meat chicken from Costco with some olive oil, salt, & pepper, surprisingly it was better than I expected. This recipe is from a friend of the family, she uses rotisserie chicken, but the canned is so much easier to use & tastes just as good. 

MODIFICATIONS 
I have made many different types of chicken salad with canned chicken. You can add any type of nut, walnuts, almonds, cashews, pine nuts, etc. All veggies go well on this sandwich, I often use, romaine lettuce, cucumber, & tomatoes.

Pulled Pork Sandwiches


PULLED PORK SANDWICHES

  • 1 pound pork tenderloin 
  • 2 cups of your favorite BBQ sauce 
  • 1 can or cup root beer 
  • 1 bag Hawaiian or bread rolls 






1. Place pork tenderloin, frozen or thawed, in a Crock-Pot slow cooker. Add BBQ sauce & root beer, cover, & cook on LOW for 6 hours or HIGH for 3 hours. Quick Tip - use slow cooker bags for easy clean up, see Products I Love for more tips. 

2. When fully cooked, remove pork leaving liquid in slow cooker & shred into pieces using two forks. Place back into slow cooker to absorb liquids for 5-10 minutes, stir well, & strain out juices. 

PLATE FINISHED PRODUCT
3. Place on a serving dish & serve on bread rolls with extra BBQ sauce. 

STORY BEHIND THE DISH
This is a simple pulled pork slow cooker recipe my sisters & I have made for various events. It is great for entertaining, easy, & delicious.  

MODIFICATIONS 
There are many things that pair well with this dish. Sides I normally serve are baked beans, coleslaw, & corn bread. If you do not eat pork you can replace the pork tenderloin with chicken. Whole30 & Paleo compliant modification, use homemade approved BBQ sauce & water or broth in place of Root Beer. Also serve pulled pork on top of a slaw.

Chicken Salad Sandwich

CHICKEN SALAD SANDWICH
(ARTICHOKES, CRANBERRIES, WALNUTS, & HERBS) 


 CHICKEN SALAD 
  • 1 can chicken breast 
  • 1 tablespoon olive oil 
  • 1/4 cup artichoke hearts
  • 1/4 cup dried cranberries 
  • 1/8 cup chopped walnuts 
  • 2 teaspoons chopped chives 
  • 2 teaspoons chopped dill 
  • 1 teaspoon salt 
  • 1 teaspoon pepper  
SANDWICH 
  • 2 slices of sandwich bread 
  • 1 piece of provolone cheese 
  • 1 teaspoon olive oil mayo 
  • 1 teaspoon dijon mustard 
  • 1/8 cup baby spinach 
  • 1/8 cup arugula 
  • 1/4 avocado, sliced
  • 1/8 cup Alfalfa sprouts  
CHICKEN SALAD

1. Open chicken, drain/rinse with water, put in a mixing bowl & break into small pieces. Chop artichoke hearts, cranberries, walnuts, & herbs. 


2. Pour olive oil over chicken and mix evenly. Pour in all ingredients, including salt & Pepper, & mix together well. I also add a little lemon juice to keep ingredients fresh. 


SANDWICH 

3. Spread mayo & mustard on bread, on one piece of bread place provolone & 1/2 cup chicken salad. Top with slices of avocado, spinach, arugula, sprouts, & other slice of bread. 
Cut in half & Enjoy.

Best part is, it taste great, it's easy, the salad stores well, & my house doesn't smell like tuna!

You can replace the walnuts with any nut of your choice, almonds, cashews, pine nuts, etc. Also some people like to make a mayo based chicken salad, just replace the olive oil with mayonnaise. All veggies go well on this sandwich, I often use others, such as, romaine lettuce, cucumber, & tomatoes.
